Banana Pumpkin Baked Oatmeal.. yumm!

Banana Pumpkin Baked Oatmeal



8 servings

Ingredients:

1 cup of pureed pumpkin
1/8 cup of walnuts  (optional)
1 egg
2 ripes bananas
1 tbsp honey
2 cups of old fashioned rolled oats
2-4 scoops of vanilla whey protein
1tsp baking powder
1/4 tsp salt
1 tbsp cinnamon
1/2 cup Truvia/Stevia in the Raw
4 egg whites (1/2 cup liquid whites)
1 1/2 cups unsweetened almond milk
1/4 cup plain Greek yogurt
4 oz unsweetened applesauce (a baby food applesauce jar will do)
2 bananas (thinly sliced)


Directions:

1.Preheat oven to 350. Spray baking pan with non-stick spray
2. Layer half of bananas at the bottom, drizzle with honey and cinnamon to taste (You can add other spices like pumpkin spice, nutmeg, allspice, etc, to give it more flavor)
3. Bake until bananas are soft, about 10 mins.
4. While your bananas are baking, we are going to mix the ingredients for the baked oatmeal. In a medium bowl mix together dry ingredients (oats, protein, baking powder, salt, cinnamon, stevia).
5. In another medium bowl mix wet ingredients (almond milk, yogurt, applesauce).
6. For pumpkin topping, mix pumpkin puree and egg.
7. Mix dry ingredients into wet ingredients, make sure it is distributed evenely.
8. Pour mixture over soft bananas you have been baking.
9. Cover with remaining sliced banana.
10. Pour evenly pumpkin mixture over your top layer of sliced bananas and then add the walnuts (they are optional)
11. Bake for 40-50 mins or inserted knife comes out clean.


This is several recipes I put together into one, and this is my first time trying to put it together. Make adjustments as you feel necessary!

It makes 8 servings.
Calories will vary according to the ingredients you use.
For me they come out to about 150 cals per slice. I will update with full nutrtional values!
